Feta cheese baked in baking paper with tomatoes and olives by Athena Loizidou

Recipe ingredients

15 cherry tomatoes cut in half

20 seedless black olives

1 small onion, finely chopped

1 teaspoon oregano

1 tablespoon olive oil

freshly ground pepper

250 gr. feta, cut into 2 pieces

2 thick slices of bread

1 tablespoon parsley leaves, finely chopped

Recipe Directions

1. In a bowl, mix the cherry tomatoes, the olives, the onion, the oregano, the olive oil and a little freshly ground pepper.

2. Heat the oven to 200 ° C.

3. In a pan, spread a piece of aluminium foil and a piece of baking paper, place the pieces of feta on top. Put the mixture with the tomatoes on top of the feta's pieces. Place the pan in the oven for 10-15 minutes.

4. At the same time toast the bread. Remove the pan from the oven and with a spatula, transfer the feta to the toast. Sprinkle with parsley and serve.
