Traditional halloumoti by Athena Loizidou

Recipe ingredients

2 packages traditional halloumi, cut into cubes

500 gr. flour and extra for the working surface

14 gr. yeast

170 gr. milk

170 gr. water

½  teaspoon of salt

2 teaspoons sugar

50 gr. olive oil

1 egg, beaten

2 teaspoons dry mint

A little sesame

Recipe Directions

1. Put the flour, the yeast, the milk, the water, salt, sugar and oil into a bowl. Mix well.

2. Put a little flour on the working surface and knead the dough for a few minutes to make an elastic dough.

3. Put the dough in a bowl and cover with a towel. Leave in a warm place, until its volume doubles, for about 1 hour.

4. Take half the dough and roll it out. Put half of the mint and 1 chopped halloumi on top. Wrap in a roll and cut it vertically into 3 pieces. Put them on a baking sheet and do the same with the rest of the dough.

5. Spread each halloumoti with the beaten egg and sprinkle with sesame seeds. Let them for about 45 minutes. Meanwhile, preheat the oven to 180 ° C. Bake in the oven for 35-45 minutes, until changes colour.
