Spaghetti penne with olives and feta by Athena Loizidou

Υλικά συνταγής

For 4 portions:

400 gr. penne pasta

tablespoon olive oil

1 tablespoon onion

1 teaspoon thyme

100 gr. white wine

150 gr. whipping cream

100 gr. Kalamon olives, seedless

2 tablespoons parsley, finely chopped

150 gr. slice, cut into cubes

Salt and pepper

Εκτέλεση συνταγής

1. In a saucepan with plenty of boiling salted water, add the penne and bake following the instructions on the package.

2. While the pasta is boiling, place a smaller pot on a medium to high heat, add the oil, let it burn and put the onion in the pan. Sauté for 5-10 minutes, until they are caramelized and then add the thyme. Deglaze the pan with the wine, and as soon as it evaporates add the whipping cream and olives.

3. Strain the pasta and throw it back in their pot. Add the mixture of olives, parsley and feta to the pot. Mix lightly.

4. Serve each serving of penne in a bowl and sprinkle with herbs.
