Soup with sweet potatoes and coconut by Athena Loizidou

Recipe ingredients

For 4 portions

2 tablespoons olive oil

1/2 red onion, finely chopped

1 tablespoon fresh ginger, grated

¼ teaspoon garlic, melted

3 sweet potatoes, peeled and cut into cubes

1 liter of water

1 tablespoon mild curry powder

1 cube of vegetable broth

Salt and pepper

200 gr. coconut milk


To serve:

Fresh thyme

Strained yogurt

Toasted bread

Recipe Directions

1. Heat the olive oil in a large saucepan over high heat. Add the onion, the ginger, the garlic, the sweet potatoes and cook until soft, about 15 minutes.

2. Add the water, the broth, the curry, the salt and the pepper. Let the mixture to a boil over high heat, then lower the heat. Cover and simmer for 15-20 minutes until the sweet potatoes are soft.

3. Add the coconut milk, cook for 5 minutes. Mash the soup with a hand blender. Serve with yogurt, thyme, boukovo and toast.
