Roasted salmon with lemon, feta cheese and olives by Athena Loizidou

Recipe ingredients

450 gr. baby potatoes, cut in half

30 gr. olive oil

Salt and pepper

½ teaspoon garlic melted

Lemon peel

3 (200 gr.) Salmon fillets cleaned with skin

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 pinch of red pepper flakes

Lemon slices


For the sauce:

30 gr. olive oil

30 gr. fresh parsley and basil leaves, finely chopped

70 gr. seedless green olives, coarsely chopped

2 tablespoons white vinegar

Salt and pepper


For serving:

110 gr. feta cheese, broken into pieces


Recipe Directions

1. Preheat the oven to 220 °C. In a pan, put the potatoes with the olive oil, the salt, the pepper, the garlic and the lemon peel, a few slices of lemon, stir and cook for 20 minutes or until soft.

2. In a shallow bowl, mix the oregano, the paprika, the red pepper flakes and a pinch of salt and pepper. Add the salmon and stir.

3. Remove the potatoes from the oven and push them to place the salmon fillets between the potatoes. Put the pan back in the oven and cook for another 15 minutes.

4. To make the sauce, mix the olive oil, the parsley with the basil, the olives, the vinegar, the salt and the pepper.
