Mac & Cheese with Vegetables

Recipe ingredients

- 300 grams cheddar cheese

- 150 grams gruyere

- 50 grams shredded parmesan

- 3 carrots

- 2 red peppers

- 500 grams pasta corals

- 110 grams flour

- 50 grams peas

- 125 grams butter

- 1/8 tsp nutmeg

- 2 tbsp. mustard

- 4 tbsp. olive oil

- 1 litre of milk

- Salt

- Pepper

Recipe Directions

For the bechamel:

Melt the butter in the casserole, add the flour and stir well with a whisk for 1-2 minutes. Add the milk, nutmeg, salt and pepper, and continue stirring, until the bechamel thickens slightly.

Once the bechamel is ready, remove the pan from the heat, add the mustard, 200 grams of cheddar and all the gruyere and mix with a ladle.

Add the sauteed vegetables, along with their oil and liquids and continue stirring.

Finally, add the boiled pasta with the peas, and mix well, so that they spread evenly in the pan.

Pour the remaining 100 grams of cheddar on top, together with the parmesan.

Put the pan in a preheated oven at 200 degrees and bake for 20 to 25 minutes, until the cheeses make a golden crust on top.
