Sausages and eggs (The Cypriot breakfast of Athena Loizidou)

Recipe ingredients

For 2 large or 4 small portions:

2 tablespoons olive oil

2 tablespoons red onion, finely chopped

1/2 red pepper, without seeds, finely chopped

1 package, 4 sausages, cut into pieces

200 gr. halloumi cut into cubes

½ package (200 gr.) chopped tomatoes, canned

1 teaspoon thyme

teaspoon oregano

teaspoon paprika

teaspoon cumin

teaspoon sugar

¼ teaspoon bukovo

Salt and pepper

4 eggs

teaspoon olive oil


To serve:

Toasted bread

Recipe Directions

1. Heat a cast iron pan. Add the olive oil to the pan, fry the onion and the pepper. Mix for 1-2 minutes. Add the sausages and cook for 2 minutes. Add the halloumi cubes and fry for another 2 minutes. Add the tomatoes, the thyme, the oregano, the paprika, the cumin, the sugar, the boukovo, the salt and the pepper. Mix to homogenize.

2. Βreak the eggs directly in the hot pan, sprinkle with olive oil and cook for 2 minutes. Then place the pan in a preheated oven at 200 ° C for additional 10 minutes to bake the tops of the eggs. Once the eggs are cooked as we want, divide them into 2 or 4 parts and enjoy them on toasted bread. Add extra salt and pepper, if desired.
