Greek traditional sofagada | Time for food with Argiro

Προϊόντα που χρησιμοποιήσαμε στην συνταγή

Υλικά συνταγής

2 eggplants

2 zucchini

250 gr. okra

2 onions

2 potatoes

3 ripe tomatoes,cut

3 cloves garlic

½  cup olive oil

½  bunch cut parsley

Salt

Pepper


Εκτέλεση συνταγής

If we use okra, after clean them (their top), put them flat in a baking tray, sprinkle them with vinegar and leave them in the hot sun for 60' to dry. Then put them in a strainer to drain.

Cut the eggplants, zucchini, potatoes into pieces and put them in a roaster for the tourlou in the oven.

Cut and add the onions.

Melt the garlic with the blade of the knife and put them in the roaster.

Add the okra (optionally you can also add green beans) as well as the cut tomatoes.

Sprinkle with parsley.

Season the food with salt and pepper and pour over the olive oil.

Add water, to cover the base of the roaster, about 1 cup.

Cover the roaster and bake in a preheated oven at 200 °C for about an hour and a half.

For the first hour we bake the tourlou in the roaster covered with a lid and then we uncover it and let our food melt and cook properly.

During cooking control the liquids of the food.

The tourlou must have its oil.
