Sea bream fillets with cherry tomatoes and crust by Athena Loizidou

Recipe ingredients

30 gr. olive oil

2 sea bream fillets, without bones and skin

100 gr. cherry tomatoes, cut in half

½  red onion, finely chopped

10 leaves of fresh basil

60 gr. ground toast

20 gr. grated parmesan

1 tablespoon chopped parsley

Salt and pepper

Recipe Directions

1. Preheat the oven to 200 ° C.

2. Season the fish fillets on both sides with salt and pepper. Put a little of the olive oil in a medium pan over medium to high heat. Once the oil is warm, carefully place the fish fillets. Bake for 1 minute on each side. Remove from the pan and transfer to a baking sheet. In the same pan, put the rest of the oil and place it on a medium to high heat. Saute the cherry tomatoes and the onion for 3-4 minutes. Add the basil, the salt and the pepper.

3. In a bowl put the toast, the grated parmesan and the chopped parsley. Stir well.

4. Place the mixture with the cherry tomatoes on the fish fillets and sprinkle with the toast mixture. Bake in the oven for 6 minutes. Place the fillets on a plate and serve.
