Crispy sandwich with ham, pesto, sage, cheese and tomato by Athena Loizidou

Recipe ingredients

1 tomato, cut into thin slices

salt

60 gr. Basil pesto ready

2 tablespoon fresh sage, chopped

4 slices of bread

90 gr. mixed grated cheeses

60 gr. ham

20 gr. fresh arugula leaves


To fry the sandwiches:

40 gr. olive oil


Recipe Directions

1. Place the tomatoes on a cutting board and sprinkle with salt. Leave for 15 minutes for the tomatoes to eliminate their moisture.

2. In a bowl, mix the pesto with the sage.

3. Spread the inside of each slice of bread with the pesto-sage mixture. Inside the slices of bread, spread the cheese, ham, tomatoes and a little arugula evenly. Add the top piece of bread.

4. Heat the olive oil in a cast iron pan over medium heat. Put the sandwiches in the pan and cook until well browned on each side, about 3-5 minutes.
