The 5 new food trends and cooking trends for 2022

In the recent years and focusing on the beginning of the pandemic and consequently the unprecedented for the 21st century global traffic ban, consumers began to be more concerned with their diet and the products they put on their table!

Fashion is everywhere even in the food we eat and brings to the... table new suggestions for the new year. Consumer habits also shape the products we consume, thus forming the cooking trends for 2022!

What does the world… casseroles cook for the new year? Comfort food, healthy eating, sustainability and the environment as a priority, acquaintance with vegan & vegetarian dishes and virgin cocktails! Read all the gastronomic trends that we will see in 2022.

1. Sustainable nutrition and the environment, in the foreground!

But what does this mean? The production and consumption of food are today the main motivators that lead to the destruction of our planet and promote climate change (now urgently called climate crisis), lead to diversity reduction, threatening the sustainability of the ecosystem and have as collateral losses the challenge and deadly viruses (see covid-19)

January is now referred to as the Veganuary with the aim of raising public awareness of a more environmentally friendly cuisine and animals and this is a sign of the times.

Let us agree that it is the least pity that 1/3 of the food produced, lost, not consumed and thrown away, while according to the International Food & Agriculture Organization, global food requirements are expected to increase by 60% by 2050 The need for a solution is more urgent than ever.

The study of the sustainable nutrition and food systems is at the heart of research to tackle hunger and meet the goals of sustainable development. Before the pandemic, the term sustainability was only heard in the university halls, but now everything has changed.

Within a year of a pandemic, priorities changed. In 2022, sustainability is not just a trend, but a necessity that will determine our diet. In short it will lead humanity to:

-less use of plastics

-economy in the use of water

-reduced use of chemicals in crops

-increase in organic production

-reduction of food waste

- introduction to vegan & vegetarian cuisine

-organic food

-new meat substitutes

2. Comfort food

In 2022 comfort food will be a point of reference. What is comfort food? We can say it as… food of consolation, but in essence these are traditional dishes of each country with a modern touch or not, that aim to fill and not to impress. With so much psychological pressure and intense stress during the pandemic, people need a little relaxation, which is why dishes will become the dominant trend. So we are expected to try special breads, postmodern versions of classic dishes, soups and much more!

3. Alcohol-free cocktails

Mocktails, otherwise virgin cocktails, are delicious admixtures of non-alcoholic beverages. With a more general focus on our well-being and health, 2022 will be a trend, as the bad effects of alcohol on our body are well known. Non-alcoholic cocktails come to meet the needs of those who for various reasons, can not or do not want to consume alcohol. These drinks are created from juices and soft drinks, such as wine, tea, tonic coke

4. Exotic drinks and food, which offer experiences

More than ever, all travel lovers and most people look forward to experiencing new adventures, delicious experiences that will travel us and take us out of everyday life and what we face in it.

Travel and food outside have stopped abruptly and the needs of the people are accumulating. Our mood for adventure is eased by trying different cuisines, exotic fruits, vegetables, original recipes and dishes that we will taste for the first time!

5. The digital age: delivery & restaurants without… tables!

In the middle of the pandemic and counting 3 or 4 lockdowns so far, the Greeks discovered the model of online ordering. Due to the impossibility of visiting a restaurant, either because they were closed or due to fear of overcrowding, deliveries took off and have now become part of the daily life of many households! This will continue in 2022, with more and more "ghost" restaurants opening their doors!
