Summer Recipe: Quinoa Salad with Vegetables & Feta
Ingredients:
1 cup quinoa
2 cups water
1 cucumber, diced
1 tomato, diced
1 spring onion, chopped
1 red pepper, diced
½ cup feta cheese, crumbled
¼ cup olive oil
Juice of 1 lemon
Salt & pepper
Instructions:
In a non-stick NAVA pan, sauté the spring onion lightly, then add the quinoa and water. Bring to a boil, reduce the heat, and simmer for about 15 minutes until the water is absorbed. In a large bowl, mix the cooked quinoa with the vegetables and feta.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and mix well. Chill for 30 minutes before serving to let the flavors blend.
