Υλικά συνταγής

1 kg. zucchini tops with their flowers

4 zucchini

4 medium potatoes

1 large tomato 

1 medium onion 

1/2 bunch of fresh mint

1/3 cup olive oil 

Salt

Pepper 


To serve: 

Dry greek cheese mizithra (optional) 

A little olive oil

Εκτέλεση συνταγής

Carefully clean the zucchini tops from their fibers with a knife as we clean the celery.

Clean the zucchini flowers.

Wash them very well, drain them and cut them into pieces.

Put the zucchini tops with their flowers, the chopped onion, the zucchini, the chopped potatoes cut in half, the peeled and chopped tomatoes and the coarsely chopped mint in a saucepan.

Finally, add the olive oil and 1 cup of water.

Season with salt and pepper.

Simmer for about 30-40 minutes.

In the end, the food will be juicy.

Serve in deep dishes with a little olive oil.

Optionally, sprinkle the zucchini tops with plenty of grated dry greek cheese mizithra.

Alternatively, add grated greek cheese feta.
