Easy spaghetti with peas and prosciutto by Athena Loizidou

Recipe ingredients

500 gr. spaghetti spaghetti

4 eggs

1/3 cup fresh chopped parsley

1/2 cup of fresh basil chopped

1/2 cup of freshly ground parmesan

Salt and black pepper

1 pinch of crushed red pepper flakes

50 gr. diced butter

250 gr. frozen peas

12 slices of fresh prosciutto cut into small pieces

125 gr. (1 ball) burata cheese torn into pieces

Olive oil for serving


Recipe Directions

1. In a large saucepan, boil salted water. Boil the pasta following the packaging instructions.

2. At the same time, beat the eggs in a bowl. Add the parsley, the basil, the parmesan and a pinch of salt and pepper, mix well with a hand whisk. Finally, add a pinch of crushed red pepper flakes.

3. When the pasta is ready, drain it and throw it back in the hot pot. Working quickly, add the egg mixture to the hot pasta and immediately start stirring for 2-3 minutes or until the eggs are cooked and a creamy sauce has been formed. Add the butter, the peas and mix. Try and add  salt and pepper.

4. Add the prosciutto and the broth. Divide the pasta into plates or bowls. Sprinkle lightly with olive oil, salt and pepper -if we want- and enjoy.
