Spaghetti with fresh herbs, olives and parmesan by Athena Loizidou

Recipe ingredients

2 tablespoons olive oil

1 teaspoon crushed red pepper in flakes (bukovo)

teaspoon oregano

teaspoon thyme

The zest of a lemon

Salt and pepper

100 gr. seedless green olives, cut in half

100 gr. seedless black olives, cut in half

500 gr. pasta Fettuccini whole grain la molisana integral

60 gr. white wine

100 gr. grated parmesan

1/4 cup fresh basil, chopped

2 tablespoons fresh dill, chopped

10 cherry tomatoes, cut in half for serving

Recipe Directions

1. In a medium saucepan add the olive oil, the boukovo, the oregano, the thyme, the lemon peel and a pinch of salt and pepper. Cook on medium heat mixing occasionally for 2 minutes. Lower the heat and put in the olives. Cook for another 3 minutes.

2. In a large pot put salted water and boil it. Add the pasta and cook according to the instructions on the package. Then, drain the pasta. 

3. Add to the hot pasta the contents of the pot with oil and olives, the wine and mix them. Remove the pan from the heat and add the parmesan, the basil, the dill, the cherry tomatoes and mix again.

4. Distribute the pasta in each dish and enjoy!
