For 40 cookies:
250 gr. unsalted low-fat butter, cut into pieces
150 gr. powdered sugar
1 egg yolk
1 teaspoon vanilla extract
350 gr. flour for all uses
zest of 1 lemon
zest of 1 orange
30 gr. pistachios
1. Preheat the oven to 170 ° C.
2. In the mixer, beat together the butter, the sugar, the yolk, the vanilla extract, the flour, the lemon zest, the orange zest and make a dough. If the dough is very sticky, add a little more flour. Transfer the dough to a bowl and add the peanuts.
3. On a floured kitchen counter, shape the dough into 2 rolls.
4. Cut the dough into pieces about 1 cm thick. Place them in 2 medium non-stick pans.
5. Bake for about 20 minutes. Remove the cookies from the oven and let them cool before serving. We can keep them sealed.
